“Wherever Citrus trees are abundant, there will be Carob trees as well”
At least, that´s what our grandparents used to say. In the Algarve you can see both types of tree growing side by side, so it seems that they were right.
Carob trees have been cultivated for over 4,000 years, and their health benefits are widely known. So it’s surprising that it’s only been around 20 years since humans began to develop the carob fruit as a healthier, lower calorie alternative to cocoa.
Carob flour is used abundantly for pastries in the Algarve. Its unique flavor, together with the increasing popularity of health foods, has transformed carob flour into a “must have” in every kitchen. So, naturally we have freshly baked carob cakes at our market stands!
But Marafado also has “a thing” for Liqueurs, and that´s when we thought of putting carob fruit through a distillation process. We have to tell you, the result is amazing!
